Microwave Banana Mug Bread
Last night myself and my honorary wife Kate (we're a frouple, it's a thing...) made some microwave banana bread, it was kind of done on half a recipe and instinct, but they were the perfect thing to satisfy a late night sweet tooth and use up some suspicious looking bananas Kate had left over... she'd kept them in the fridge with a hat on... as you can see from the photo they had gone an interesting colour, but they were perfect inside - top tip for all you banana fanatics out there!
Ingredients: (Makes one mug)
1 medium banana (riper the better)3tbsp self raising flour
2tbsp vegetable oil
2tbsp sugar
pinch of baking powder
Optional Extras:
- capful of vanilla extract- sprinkling of cinnamon
- handful of white chocolate chips
- spoonful of nutella
(I had all four... it was amazing!)
Method:
1. Mash the banana (easiest way to do it is in the mug you're going to use, with a fork)2. Add the remaining ingredients (including any optional extras, apart from the nutella which is the crowning glory at the end!)
3. Mix really well, making sure there's no flour trapped in the corners at the bottom of the mug
4. Microwave in the mug for 2 minutes, with an additional 30 seconds if your microwave is a weakling!
5. Add nutella if you're going to...
6. Enjoy!
